20 Amazing Microgreen Recipes

How do you use microgreens? Here are a few ideas.

You just got your delivery of microgreens and probably wondering what to do with them. Here are some ideas:

  • Salad: Combine a few types of microgreens together to form a nutrient packed salad. I normally use sunflower as the base and then mix in beets, pea shoots and arugula for additional flavors. Top with whatever you desire (eggs, nuts, tomatoes, croutons, chicken, dried fruit, etc.)

  • Garnish: Add an extra pop of color and nutrient to your dishes. Try them on top of soups, pizzas, omelets, pastas, curries, stir-fries and any other dish.

  • Wrap/Sandwich: How do you make a sandwich less boring? Throw some microgreens into it and viola, it's gourmet.

  • Smoothie/Juice: Any microgreen can be blended into a smoothie while wheatgrass and broccoli microgreens are especially popular for juicing.

  • Stir-Fry: I'm probably going to get some side-eye from the community for even suggesting this since microgreens are meant to be eating raw to preserve as much nutrients as possible. But you know what? If you want to stir-fry it, why not? Just make sure you add in the microgreen last, and it's only in the pan for a quick 5-20 seconds.

  • Extra Flavors: Want to make your dish a little spicy? Incorporate some radish and mustard microgreens to add some zing to your dish. Other microgreens have flavors that are sweet (peas, beets), sour (sorrel, cilantro) or even bitter (quinoa).

  • Color: Sight is one of senses and it plays a huge role in how we taste. Use microgreens to add some more color to your recipes. Amaranth and beet can add a very nice blush to any mean.

1) Pizza w/ Pesto, Mozzarella, and Arugula Microgreens

Who doesn't like pizza right? Just imagine whatever vegetable you enjoy in your pizza and replace them with a microgreen version. In this example we're using arugula microgreens.


You can use microgreens as a main ingredient or as a simple garnish. I'm always looking to add more protein to my diet, so when I enjoy a slice, I load it up with sunflower microgreens to supercharge my meal.


2) Microgreen Salad with Lime Vinaigrette

Want something refreshing, nutritious but EASY? Salads are the perfect answer and this is what people normally imagine when they think of microgreens.


You can get buck wild when it comes to salads. Mix and match whatever you like and experiment with different toppings. Variety is the spice of life and you certainly can't go wrong here.


3) Egg White Omelet with Avocado, Goat Cheese and Microgreens

This one is great for you macro counters! Turn that boring breakfast into something to look forward to.


Use sunflower microgreens to inject some additional protein into your diet. There aren't plant-based complete proteins out there but sunflower is one of them. They also add a nice crunch to a traditional sloppy omelet.



4) Beef Burger with Microgreens, Mint Aioli & Feta

Nothing says summer like a nice burger. You seriously cannot go wrong with this. Pair it with a chocolate malt and all your troubles will melt away.


The pickled onions really hit the spot for me. My wife not so much. So be warned.




5) Kimchi Ramen with Microgreens

A quick and easy way to cook Kimchi Ramen. This recipe doesn't call for microgreens, but I add it to mine.


I wanted to use this to illustrate how you can put microgreens in all of your noodle soups (pho, wonton, minestrone, chicken noodle, soba, udon).


Heck when I get lazy and make myself a pack of those insta-ramen, I pop in two eggs, dump in some microgreens and bam, it's restaurant grade! Ok not really, but better than just plain ol MSG. Turn those guilty pleasures into something nutritious.


6) Bacon Hash Brown Casserole with Eggs

I absolutely adore the idea of personal-size casseroles. The presentation is amazing and makes a wonderful breakfast in bed for that special occasion (or every Sunday).

Woo-hoo, it's time to get fancy! There's no better way to dress up those tiny morsels than with microgreens.


First recipe uses microgreens but the second does not. I'm including it so you can use it as a base but then add in the microgreens after. That's the trick to using microgreens, just take something you like and sprinkle some greens in it.


8) Stir Fried Pea Shoots with Garlic

This is the recipe that will drive all my elitist microgreen buddies bat crazy. We're going to cook microgreens. Yup you heard me.


This is my all time favorite and I can eat this every day. It's simple to cook and only requires like 5 minutes, 10 if you chop slow.


The recipe asks for chicken bouillon powder, but you can substitute that with chicken broth, oyster sauce, shaoxing wine, or nothing. Careful not to add too much liquids else your shoots will turn into a puddle.


The true Asians will also add a teaspoon of minced ginger. Also, the recipe says to cook it for 1-2 minutes but that's way too long. Depending on how big of a batch you're cooking with, I normally only cook mine for like 30 to 60 seconds. Use the picture as a guide. You still want your pea shoots to be crunchy and a lively green color. Overcooking these guys will turn it into a soggy mess.


9) Mini Strawberry Chocolate Tart with Whipped Goat Cheese & Basil Microgreens

I'm drooling just looking at the picture. Who says dessert can't be healthy!


The cool thing about microgreens is you can either eat it as a main course or as a garnish. Just add a sprinkle of it in any dish to inject some color and nutrient into your dish.




10) Pea Shoot Pesto

Pesto goes with everything - on pasta, as a dressing, in a pizza or as a condiment on a bunch of stuff like sandwiches, burgers and wraps.


Traditionally you make pesto out of basil leaves, but this one is made out of pea shoots but you can also try sunflower, another others, or in combination.




11) Avocado Toast with Microgreens and Egg

Protein (check). Healthy fat (check). Carbs (check). Start your day right with this healthy breakfast made from fresh microgreens on top of avocado toast and eggs.


They're so good you'll want to heave it for lunch and dinner.

The author describes this as a grilled cheese heaven and I'd have to agree, down to the "gooey and crunchy" part.


My little boy devours this in an instant (without the mustard of course).

Add that finishing touch to your dish. Green is always a good color but if you need something really bold, try amaranth microgreens. It injects a bold red into your work of art.
