Storing Your Microgreens

How to take care of your greens so they last longer


We pamper our microgreens fairly well in our farm with a consistent level of light, water, temperature, airflow and humidity. Heck, we even sing to them.

Veggies are made of ~90% water by weight. Once they are harvested, they're cut off from their water source and will wilt in the kitchen like they do in that dry June garden.

So now that they are in your hands, here are a few suggestions to keep them in tip top shape until they go into your tummy. These tips will help keep your greens good for up to a week.

1) Hand them a napkin


Maintaining moisture is a critical part of keeping your microgreens fresh and crunchy. One of the best and simplest ways is to store them between pieces of paper towels and then seal them back in the container that they come in.


2) Keep it cool


After you wrap them up, straight into the fridge they go. Microgreens like it cool, like 36 degrees cool.


3) Timing


Keep your microgreens in the fridge until they're ready to go into your recipe. They taste much better this way.


4) Washing


Just like any vegetables, you should wash your microgreens before eating them. But microgreens can bruise easily so be gentle with them. Simply give them a light rinse in cold water and pat them dry with some paper towels. If you have a salad spinner then that's even better.


Wash your microgreens right before you consume them. Like most veggies, washing microgreens before you store them in the fridge will cause excess moisture and make it go bad.
